"Pitaroudia" from Dodecanese Islands

A traditional recipe from the Dodecanese, specifically from the island of the Knights, Rhodes, is the Pitaroudia. You will want to make this recipe whenever you have friends over. It is an excellent appetizer to enjoy with ouzo, wine or beer over some good conversation.
Recipe ingredients
• 4 onions
• 2 ripe tomatoes
• 10 chopped mint leaves or 1 tbsp. dried
• 5-6 tbsp. flour
• salt
• pepper
• flour for dredging
• oil for frying

1. Finely chop the onions and tomatoes. Put the ingredients in a bowl and add the mint, salt, pepper and slowly the flour. Stir and add enough flour so that we can shape the mixture into small pieces.
2. Put oil in a pan until hot and smoking.
3. Dredge the pies with flour. Fry until they turn brown and are crispy.
