"Kazandibi" from Drama-Kilkis
In the area of Drama and Kilkis you will enjoy specialties with the freshest local products. Buffaloes are raised in the area and visitors can taste buffalo products, including the famous sausages of Heraklion (Tzoumagias). The award-winning desert “Kazandibi” is made with buffalo milk. The recipe is hereunder.
Recipe ingredients:
1 liter of milk
- 400g cream
- 1 1/2 cups sugar
- 3 tablespoons rice flour
- 3 tablespoons of corn flour
- 2-3 tears of mastic or 2 tablespoons of rose water or vanilla
- 2-3 tablespoons powdered sugar
- 1 tablespoon butter
The authentic Kazan dipi is made with buffalo milk, something that is difficult to find if we are not near Lake Kerkini. We substituted buffalo milk with full fat cream for a velvety finish.
In a bowl add the rice flour, the corn flour and some milk. Mix well to melt and break down any lumps.
In a saucepan put the rest of the milk, cream, sugar, mastic or rose water or vanilla add the rice and corn flour mixture. Mix very well and put over medium heat until it thickens slightly and blisters.
Take a large clear glass baking dish oven proof. Carefully butter the entire dish and add the icing sugar to cover the bottom.
Pour the mixture into the pan (the mixture is liquid) and smooth the surface.
Turn on the larger stove burner and place the baking dish over it. Slowly cook the whole bottom of the pan. If the pan is transparent you can watch the caramelizing of the sugar. Do not overcook because it will turn bitter.
When it is ready let it cool for 3-4 hours. Cut into wide strips and with the help of a spatula roll them. Serve with the caramelized side facing up. Optional, sprinkle with chopped pistachios.
