"Tzigerosamades" from Thrace

"Tzigerosamades" from Thrace

"Tzigerosamades" is a very old recipe of Thrace, its traces have been lost for centuries. You will either love or hate this recipe depending if you like eating liver. It is a unique recipe full of aromas that one must try it.

 

Recipe ingredients

  • 1 lamb pluck or goat liver
  • 2 tripe of lamb or goat
  • 3 fresh onions, finely chopped
  • 1 onion, finely chopped
  • 1 bunch of chopped dill or chopped parsley
  • 1 cup chopped mint
  • 4 tbsp. glutinous rice
  • 1 cup water
  • 4 tbsp. pine nuts
  • 1 egg for glazing
  • 3 spoonful olive oil for sautéing
  • a teaspoon oregano
  • salt
  • pepper

 

For the sauce

  • 2 cups of cow yogurt
  • 4 eggs
  • salt
  • pepper

 

1. Boil the liver and chop it finely. Place the tripes in lukewarm water to soften and expand.

2. Prepare the filling: in a pan, sauté the fresh and dried onion in olive oil and add the liver, dill, parsley, mint, pine nuts, rice and spices and cook.

3. Drain the tripe and cut it into small square pieces.  Shape the filling into a small meatball and wrap in the tripe. Spread over them oil and bake in a preheated oven at 180 ° C.

4. Prepare the sauce: beat the eggs and add the yogurt until blended. When the Tzigerosamades are browned pour the sauce over and bake for another 20 minutes.

5. Serve warm.
