"Tigani" of Macedonia, from Eastern Macedonia
A traditional easy recipe from the region of Eastern Macedonia, mainly the villages of Grevena and Valia Calda, is “Tigania of Macedonia”. Since hunting is very popular in this area for most of the year, and all homes have a hunter, this dish is primarily made with wild boar. It can be served as an appetizer with a glass of strong wine, or as a main course accompanied with rice or mashed potatoes.
Recipe ingredients
• 1 kg of pork belly (or wild boar) cut into bite pieces.
• 1 chopped leek
• 1 onion finely chopped
• 1 cup white wine
• ¾ cup olive oil
• 1 tsp red pepper flakes
• salt
• pepper
1. Sauté the onion and leek in olive oil.
2. Add the meat and sauté for about 10 minutes, until it turns brown on all sides.
3. Add the wine. Allow the alcohol to evaporate for a few minutes.
4. Add the red pepper flakes, salt and pepper and add 1 ½ cup hot water.
5. Cover the pan, lower the temperature and simmer for about 20 minutes.
6. Remove the lid, turn up the heat and cook down meat until all liquids are evaporate.
7. Serve the meat with rice or mashed potatoes.
