"Spetsofai" from Central Greece

If one visits Central Greece, and specifically Kalampaka, Meteora or Trikala, there is an excellent meze you have to try. It is called “Spetsofai” and is not missing from any table. It is eaten either as an appetizer or as a main dish. The problem with this dish is, you will never want to stop eating it. The sauce is so delicious you will need a lot of bread to dip in the scrumptious sauce. In Greece, this habit of dipping bread in sauces or in salad dressing is called "vouta".


Recipe ingredients:
• 2 rustic sausages
• 8 green horned green or red peppers
• 1 clove of garlic
• 1 fresh tomato passed through the grater
• 2 tbsp. olive oil
• 1 glass of water
• salt
• pepper

1. Cut the sausages into slices, wash the peppers, peel them and cut into thick slices, about 2 fingers wide.
2. In a deep-frying pan with a lid, sauté the sausages in olive oil to remove their fat, 3-4 minutes. Add the peppers and stir. Sauté all the ingredients together for 5 minutes.
3. Add the garlic, tomato, salt and pepper. Stir and cook for another 4 minutes. Add a little water and as soon as it boils, set the temperature to low.
4. Cook for about half an hour with the lid closed.
