"Epirotika Beans" with spinach, from Epirus
Epirus is famous for its healthy food, cooked with local ingredients. In the area of Ioannina and at the Zagorochoria you will find this popular dish in the local cafes. Enjoy it with local tsipouro (distilled grapes). During the bitter cold winter weather, the locals often cook it with hot peppers to warm the soul.
Recipe ingredients
- 500gr. beans medium size
- 1 kg of fresh spinach
- 1 large onion
- 1 chopped leek
- 2 cloves garlic
- 1 lemon (its juice)
- 1 cup olive oil
- salt
- pepper
Implementation –
- Preheat the oven to 200oC. Put oil paste in a pan, grease the eggplant slices with olive oil, add salt and pepper and cook until soft. When baking, turn the aubergines once. Eggplants are traditionally fried, but this version gives us a lighter result.
- Remove the oil paste and place the aubergines in the pan. Mix with the feta, garlic, salt and pepper.
- Add this mixture to the aubergines and bake in a preheated oven at 180oC for about 45 minutes. Towards the end of baking, add the basil.
- Serve hot and cold.
